What is DUKKAH?
Dukkah is a blend of seeds, nuts, and spices originating primarily from Egypt and the Middle East. Each region, and even each household, has its own recipe. Traditionally, dukkah is eaten by dipping fresh bread first in olive oil, then in the nut mixture for a flavorful and textured bite. It's also a versatile seasoning that can be sprinkled on salads or vegetables. It can also be used as a coating for lamb, shrimp, fish, or chicken. It's delicious with creamy cheeses and labneh.

The ingredients
· 1/2 cup of pistachios
· 4 tablespoons of black or white sesame seeds
· 2 tsp coriander seeds
· 2 tsp of fennel seeds
· 1 tsp cumin seeds
· 2 tsp of Smoked Pinch No. 13 blend
· 2 tsp fresh thyme leaves
· Smoked salt flakes, to taste (optional)
· 400g of soft goat cheese
· 100g of cream cheese
· the zest of 1 lemon
· Olive oil + flatbread or other breads or rusks, for serving

The procedure to follow...
1 - For the dukkah: Roast the coriander, fennel, and cumin seeds in a dry pan, stirring until they begin to crackle and release their aroma. Coarsely grind them using a mortar and pestle. Roast the pistachios and sesame seeds using the same method as the spices. Then, finely chop the pistachios in a food processor or with a knife. Combine the pistachios, sesame seeds, ground spices, Smoked Pinch No. 13 blend, thyme, and smoked salt. Mix well and set aside.
2 - For the cheese: In a food processor, combine the goat cheese, cream cheese, lemon zest, and a pinch of salt. Transfer to a bowl and refrigerate for at least 1 hour before rolling.
3 - Spread the dukkah on a plate. With well-oiled hands, gently form small balls with 1 tablespoon of cheese and then roll them in the dukkah. Place on another plate and refrigerate for at least 1 hour before serving.
To serve, drizzle with a little olive oil and garnish with fresh thyme. Serve with bread or crackers.
Makes approximately 24 small balls.
